West African Vegetarian Peanut Stew

INGREDIENTS
3 cups of mix Vegetable of your choice or Tofu ( Cabbage, cauliflower, Carrots, Okra, Black eye peas)… 2 teaspoons kosher salt, more to taste 1 teaspoon freshly ground black pepper 3 cups of Afro Fusion Cuisine Mafe ( Peanut Sauce) 1 tablespoon peanut oil 1 cup of Afro Fusion Cuisine Yassa sauce ( Divided) 2 tablespoon of Organic Tomato paste or 4 tablespoon of Afro Fusion Joloff (tomato Herb) 3 tbs of organic peanut butter paste, preferably unsweetened 2 cups of water or chicken broth 1 scotch bonnet or habanero chili, split but left whole
Directions
1. Pour oil into a wide, heavy-bottomed 8-quart pot over high heat. When oil shimmers add your Afro Fusion Yassa sauce, Joloff sauce.
2. Pour in your Afro Fusion Cuisine Mafe sauce, chicken stock or water. Add your peanut butter paste and the vegetables.
3. Bring to simmer over medium heat.
4. When stew begins to simmer, reduce heat to medium-low until vegetables are tender. Let stew rest 5 minutes, then ladle over hot, cooked white rice.
Tip: This sauce can be as thin or as thick as you desire. It is a matter of personal preference. For a thicker sauce, let reduce over low heat and for a thinner sauce, add water and adjust salt and pepper.
