ROTI OKRA and Pan-Seared Halibut
HOW TO SEASON THE HALIBUT: Seasoning for the Halibut ( 1 lb) 2 sprigs of Parsley 1/2 tbs of Afro Fusion All Purpose Seasoning ( find it at @whole foods Milwaukee or Good Harvest market) Salt/White pepper to taste 2 gloves of garlic 1 tbs of extra virgin olive oil Mix all the seasoning & herbs and pulse in a blender and use to marinate the fish that you will pansear – Make sure to keep skin down to get great crispiness and set aside
Roti of Okra: 1 cup of finely sliced onion 2 cups of chopped okra ( round/circle) 2 cups of roughly chopped tomato very ripe Finely diced Garlic 1 tbs of freshly grated ginger 2 finely chopped scallions 1/2 teaspoon of fresh thyme 2 bay leaves 1 cup of Pre-cooked diced Carrot or Cabbage or potato ( optional) Salt/White pepper to taste 1/4 cup vegetable oil of your choice 1/2 cup of Stock INSTRUCTIONS In a heated skillet, add oil and sautéed your Okra for 2-3 minutes and add in onion and sautéed until translucent ( do not add water) Add tomato, bay leaves, scallion, thyme, ginger, garlic – Sauteed until you do not see a lot of liquid Add in Your Diced and blanched Cabbage, carrots or Diced potatoes ( 1 cup) Adjust Salt and pepper Put your Halibut on the very top and add just 1/2 cup of water or stock. ( Do not stir)…..reduce heat to low and simmer for 3-4 Minutes and it is ready.
