Pineapple Mafe (peanut butter soup with pineapple)

The Cuisine of Sénégal also called the Cuisine of Teranga Lion is one of the richest, diverse and versatile cuisines of Africa. In West Africa Senegalese cuisine ranks supreme among foodies and has been exported all over Africa and overseas through the vehicle of spices trade, slavery and today’s brain drain coupled with immigration. The cuisine of Sénégal has been influenced by colonial nations like France through 1960 occupation, Portugal, and neighboring cuisines of North Africa, and also by many ethnic groups, the largest being the Wolof empire from the 11th century. This recipe was proposed by AIDA GUIRAUD.

Ingredients

1 Tbs of organic concentrated tomato or ½ cup tomato puree 2 Tbs Sesame oil 1 onion chopped 3 Tbs of Organic peanut butter paste 1 sprig of fresh thyme 20g ginger 1 Jar ( 16 0z) of Afro Fusion Cuisine Mafe 1 potato, carrot or desire (optional) ½ Cup of water 4 slices of pineapple Precooked Meat lightly seasoned with salt and 2 tbs of Afro Fusion All purpose seasoning (Optional) Salt and water

DIRECTIONS

1. In a saucepan, heat sesame oil, add chopped onion, thyme, ginger and stir for 1 minute. 2. Pour in Afro Fusion Cuisine Mafe Sauce and bring to simmer. 3. Add peanut paste and water and your choice of veggies or pre-boiled meat. 4. Simmer on slow fire until peanut butter dissolve. 5. Salt and pepper to taste. 6. Dip the pineapple slices and put out the fire. Serve with rice.
