Nigerian Moi Moi – Black Eyed Pea Cakes

Ingredients

3 cups of  Black eyes peas cleaned and ground or 3 cups of beans Flour 1 Cup canola oil or Palm nut oil  ( traditional recipe is palm nut oil) 2 Cups warm water 4 cloves of garlic 1 red Onion finely sliced (1/3 cup) 1 knorr or bouillon cube 1 cup of Corn Beef 1 teaspoon of Afro Fusion Cuisine All Purpose Seasoning 1 scotch bonnet pepper finely sliced (1 tbs) 1/3 cup of dried bell pepper finely diced (optional) 2 hard boiled eggs – cleaned and quartered Salt and Pepper to taste

Directions

1. Blend your onion, garlic, scotch bonnet pepper, Bouillon cube and red pepper and pour in a bowl, add oil and water and mix well. 2. Add your bean flour  or your freshly ground black eye peas paste and mix until it becomes a fine batter without clumps 3. Add corn beef and remaining ingredients except your eggs that will be used as garnish 4. Prepare your cake or cupcake molds/pans and fill those up 3/4  full each 5. Add your egg garnish in each mold/Cake pans as seen on the picture before putting in the oven 6. Cover with a foil and put in oven, bake for about 1 and 1/2 hours at 375 degree fahrenheit. While in the oven, relax, put your leg up, read a book, watch TV..etc 7. Using a knife ensure it is done when the knife can stand ( just like for traditional cakes). Add additional cooking time until your cakes can pass the knife test, up to 30 minutes…not more!
