Jamaican brown Chicken with Afro Fusion Cuisine Jerk Marinade

INGREDIENTS

1 whole chicken (about 3lb) 2 tbs of lime juice 1 teaspoon of salt 1 teaspoon of Afro Fusion Cuisine Jerk Seasoning 1 cup of yellow onion finely sliced 3 stalks of scallion 1 hot pepper (ideally scotch bonnet) 2 cups of  mixed sweet pepper ( Green, Yellow or Red) 3 cloves of garlic finely diced 1/2 inch of ginger grated 3 tbs of  fresh tomato diced, tomato paste or crushed tomato or ketchup 1 cup of  Coconut Oil for frying or any vegetable oil will do 3 tablespoons of flour 3 sprigs of fresh thyme (or 3 teaspoons of dried thyme) 1 tablespoon of butter 3 tablespoons of Afro Fusion Cuisine – Jerk Marinade ( Reggae Girl) 2 tablespoons of soy sauce 2 cups of water

Directions

1. Wash the chicken with a splash of lime juice

2. Chop the chicken in to small pieces.

3. Chop the onion, scallion, hot pepper, sweet pepper, garlic and tomatoes (if using whole tomatoes) in to small pieces, grate the ginger and mix the flour in 1/4 cup of water.

4. Season the chicken by rubbing in salt, jerk Seasoning, Afro Fusion Cuisine’s Reggae Girl Jerk Marinade, thyme, onion, scallion, hot pepper, sweet pepper, garlic, ginger and tomato.

5. Leave to marinate for one hour at least and 3hours is optimal

6. Scrape the seasoning off the chicken and fry in heated oil by batch until the chicken is sealed and brown on both sides (about 5 minuted).

7. Remove the browned chicken and drain off the oil.

8. Melt the butter or Preferably 1 tablespoon of coconut oil in the saucepan and fry the onion, scallion, hot pepper, sweet pepper, garlic, tomatoes and thyme for three minutes

9. Add the water, soy sauce and simmer for five minutes.

10. Stir the flour &water mixture in to the stew then add the chicken.

11. Simmer for five minutes, occasionally stirring gently with a wooden spoon under low fire

12. Cook slowly for another 5-10 minutes under low fire and get ready to plate and serve with Rice and Peas
