Egyptian Goat Stew with Afro fusion Cuisine Seasoning

Ingredients
2 pounds bone-in goat meat, cubed 5 tblsp olive oil 2 large chopped onions 6 chopped garlic cloves 2 chopped tomatoes 3 large carrots sliced 1 tbs of Afro Fusion Cuisine’s All Purpose Seasoning – Mama Cita 6 bay leaves 3 cardamom pods 2 pieces of misticha 3-4 cups water Sea salt and ground black pepper ¼ cup chopped parsley
Directions
1. In a large deep pot brown the goat in olive oil over medium heat with the cardamom, misticha and bay leaves. 2. Add onions to the pot and cook until translucent. 3. Add garlic and Afro Fusion Cuisine spices. 4. Cook and stir another 5-10 minutes until garlic is fragrant. 5. Add the tomato and 1 cup of water. 6. Bring to a boil then simmer on low heat covered. 7. Keep stirring every 15 minutes and add the remaining water, 1 cup at a time when you see the sauce is getting thick. 8. After 1 ½ hour, add the carrots and cook for an additional 30 minutes. 9. Add sea salt and black pepper according to your taste. 10. Serve on a bed of rice with a sprinkle of parsley. Tip: You can add more vegetables to the carrots like potatoes or green peas
