Collar Greens with Smoked Trout

Ingredients
2 Bunches of collar ( cleaned and roughly chopped without the veins) 3 Cloves of garlic 1 tbs of Afro Fusion Cuisine All Purpose Seasoning 4 Tbs Garlic oil- I make and store garlic oil 2 Shallot minced 1 Roasted Red sweet peppers or bell pepper 1 Tbs of Freshly grated Ginger 1 Tsp of fresh thyme 1/2 Lbs of Fresh smoked trout Salt, pepper to taste
Directions
1. In a heated skillet, add your oil, garlic first, ginger and then shallot, bell peppers and thyme, Afro Fusion Cuisine seasoning, add your collars and then the trout, stir and cook to your desired tenderness ( I like more collar a little hard so I went for 10 minutes). 2. Adjust salt and pepper. 3. Serve over fragrant white rice like in the picture or Drizzle a tablespoon of Balsamic vinegar and you have a salad that you can eat with Garlic bread ( made at home!).
