AFRICAN VEGETABLE SOUP with Joloff Sauce

INGREDIENTS
2 cups of Eggplant roughly chopped ( 1/2 inch thick and squared) 1 cup of carrots squared roughly chopped 1 cup of Green Beans Roughly Chopped 2 cup of roughly chopped cabbage 1 cup of cucumber peeled and cut in 1 inch Medallion 8 oz of roughly chopped tomato 1 tsp of freshly grated ginger 1 tsp of garlic pureed 1 tsp of fresh thyme 1 teaspoon of Afro Fusion Cuisine all Purpose seasoning 3 tbs of roughly chopped green onion 1 big onion roughly chopped 16 ounces of Afro Fusion Cuisine Joloff Sauce 2 cups of vegetable broth or water a dash of cayenne pepper ( optional) Salt and pepper to taste
DIRECTIONS
1. In a slaw cooker, mix all the ingredients and cook over medium heat
2. Adjust salt and pepper and serve hot
Cook-notes:
1. You can adjust this recipe to your taste by adding your choice of starch ( Potato, Yuca, plantain) or your choice of protein (Tofu, Meat, Seafood, Afro Fusion Cuisine Sausages)
2. You can even add in some cooked grains ( Quinoa, Oat) or Beans ( White Beans, Lentil, Garbanzo)
3. Feel free to add also some leafy greens ( Chard, Spinach, Kale…etc)
