African Spinach Stew (Saucy Efo Riro)

African Spinach stew a common dish across African and it comes in various form ( Saucy and not saucy, Vegetarian and not with peanut or not, with pumpkin seed or not, with palm oil or not, with beans or not…I plan to share with you some of my favorite in subsequent posts).
INGREDIENTS
1 lb of boneless roasted or smoked turkey (Pulled)
1lb of smoked meat of your choice cubed – I do pork or beef ( smokiness is critical for this dish)
1 lb of smoked trout or stock fish
2 cups of diced yellow onion
2 tbs of Garlic – Alternatively 1 bs of Afro fusion Cuisine all purpose seasoning
1 tbs of fresh Ginger – Atlernatively 1 tbs of Afro Fusion Cuisine All purpose seasoning
1 jar (16 oz) of Afro Fusion Cuisine Joloff Sauce
2 cubes Maggi ( or 2.1/2 cubes maggi crayfish) ( bouillon cube)
4 bunches fresh spinach ( cleaned and chopped finely)
1 cup of garbanzo beans soaked and softened at least for 2 hours
1/2 cup palm oil ( traditional recipe) or vegetable oil
2 large red bell peppers,
2 cups of water (divided)
2 Pablano peppers left whole
Salt and pepper to taste
DIRECTIONS
1. In a medium pot over medium heat, pour your oil, sautéed your onion and peppers for about 3 minutes.
2. Add in , maggi, joloff sauce, the meats and fish and 1 cup of water and bring to simmer stirring for about 5 minutes.
3. Add in your garbanzo beans, ginger, garlic and spinach and stir well to coa.
4. Reduce fire to low, add another cup of water and cover the pot, cook for 5- 10mins until vegetables are tender not overly saggy and sauce has thickened.
5. Adjust salt and pepper and stir well.
6. Serve warm over rice or plantain.
