African Meat Pies

Ingredients

2 cups all-purpose flour 1/2 to 1 teaspoon turmeric powder 1/2 teaspoon curry powder Pinch of salt 1/4 cup margarine 1/4 cup shortening 1/3 cup water FILLING 1 tablespoon olive oil 4 -6 garlic cloves, finely chopped 1 large onion, finely chopped 1 lb lean ground beef {Minced beef} 1 tablespoon of Afro Fusion curry blend 1/2 teaspoon of Afro Fusion All Purpose seasoning 1/2 teaspoon garam masala powder 1 teaspoon salt 1/2 teaspoon ground black pepper Chili powder to taste 1/2 cup dry breadcrumbs 1/2 cup chicken

Directions

1. Heat oil in skillet over medium heat. 2. Add onions and cook for 5 to 10 minutes stirring occasionally until soft and translucent. 3. Add garlic, cook 2 minutes. 4. Add beef, curry, all purpose, Garam masala, chili, salt, and pepper. 5. Cook until browned stirring constantly. 6. Stir in stock and breadcrumbs. 7. Simmer until liquid is absorbed. (Aprox.10 minutes). Texture should be soft and moist.

Method for Pastry: 8. In a large bowl, combine flour, turmeric, curry, and salt, mix thoroughly. 9. Rub shortening into flour until small pieces of the shortening completely covered with flour. 10. Pour in 1/2 cup iced water and mix with your hand to bring the dough together. 11. Keep adding iced water 2 – 3 tablespoons at a time until the mixture forms a dough. 12. Cut the dough into 2 large pieces, wrap in plastic wrap and refrigerate for 30 minutes before using it. Meanwhile go ahead and make the filling. 13. Flour the work surface and rolling pin. 14. Take one of the large pieces and roll out into a very large circle. 15. Take a small bowl or cup with a wide, nice rim and cut out 3 to 4 circles. 16. Place about 1 to 1 and 1/2 heaped tablespoons of the filling onto one half of each circle. 17. Dip a finger into the water or egg wash and moisten the edges of the pastry. 18. Fold over the other half and press to seal. 19. Cut off any extra to make it look neat and uniform. 20. Place on a parchment-lined baking sheet. 21. Continue to work until you have rolled all the dough and filled the patties. 22. Brush the patties with egg wash. 23. Bake them for 25 – 30 minutes or until golden brown. 24. Cool on wire racks. Serve warm. Enjoy!

Stock Assembling Beat together an egg with a bit of water or milk or cream to make an egg wash. Set aside.
