African Eggplant Fritters with Afro Fusion Cuisine all purpose seasoning

Ingredients
150 g of all purpose flour 1 egg at room temperature 1 tbs of coconut oil 1teaspoon of Afro Fusion Cuisine All Purpose Seasoning (Mama Cita) 1 teaspoon of Tumeric 1 teaspoon of baking powder 3 eggplants -Your favorite eggplant cut into circular/Round shape of 1 inch thick 25 cl of water 2 cups of coconut oil or canola oil (for frying only) salt and pepper
Directions
1.Wash your baby eggplant and pad-dry, salt and season with Afro Fusion Cuisine ‘s Mama Cita blend ( All Purpose Seasoning) 2. In a large bowl using a whisk, mix all the following ingredients in order (flour, egg, coconut oil, turmeric, baking powder, water) to abstain a light batter ( not too thick, not too watery) 3. In a deep frying pan, heat oil to 375 degree Fahrenheit 4. Deep your eggplants rounds into the batter and make sure to coat well 5. Put each eggplant bonbon in hot oil one by one and fry until golden brown. 6. Using paper towel – Remove excess oil… Serve warm with a salad and a tomato jam or onion compote!
