Smoked Jamaican Jerk BBQ Chicken

Ingredients

1 grassfed Chicken ( 1.5-2 lbs) 18 oz of Afro Fusion Cuisine Reggae Girl Jerk Marinade or 2 Jars ( use only 1 if you are new to Jerk as flavors are quite intense) 9 0z of Afro Fusion Cuisine Mama Deacon Jerk BBQ Sauce Kosher salt to your taste 2 cups of pimento chips or apple or hickory wood chips for the smoker 10 grains of pimento berry ( allspice) 6 tablespoons vegetable oil to rub on the smoker griddles

Directions

1. Clean your chicken and keep it whole. Using the tip of your knife, make tiny incisions on the chicken to allow your seasoning mixture (marinade) to penetrate the flesh of your chicken. 2. Rub the chicken with 1 teaspoon of salt ( Optional) and rub thoroughly with the reggae girl marinade. Wrap in plastic pepper or store in a tight sealed container in the fridge overnight. 3. The day of, when ready to cook, prepare your smoker to 375 degree and make sure to combine Hickory chips, applewood with your coal Smoke your whole chicken over indirect heat for 2h 15mns until properly done 4. 15 minutes prior to serving, pour your Jerk BBQ sauce over the chicken and finish smoking for a total cooking time of 2h30mn

Serve warm

Note: You actually can eat your chicken at 4th step to have the traditional Jerk Chicken flavor. For those of us who want a little more… We smoke and go BBQ style!

Remember it is about the marinade… Our marinade and Jerk sauce made anything taste delicious!!!!!!!!
